The Lobster Roll is a sandwich, made tradtionally on a toasted hot dog bun, then filled with lobster meat from a small lobster tossed with mayonnaise. The hot dog bun should be of the type that is sliced on both sides and stands with the opening on the top. The recipes vary and may contain diced scallion,onion, and/or scallion. Some people use drawn butter instead of/or in addition to mayonnaise. It is also common to include a piece lettuce and a wedge of lemon to squeeze over the top.

Patsy’s Famous Lobster Roll’s
Ingredients:2 Lobster Rolls (can be doubled, tripled, quadrupled)
1 lb FRESH Lobster meat (claw & tail)
2 – 3 Tbs mayonnaise
2 Buttered on the outside New England style hot dog rolls
Salt & Pepper
Directions:
- Grill both sides of the hot dog rolls on medium heat in skillet untill golden brown.
- Cut lobster meat into to bite size chunks.
- Add just enough mayonnaise to bind, the less the better, you want to taste lobster not mayo.
- Ground salt & pepper to taste.
- Fill rolls to capacity, then double!
Start off with a fork and work your way down. Opulent simplicity, yum.
